I’m a bad American- wah wah waaaaaha- because I didn’t vote! I wish I could say I have a good excuse- I couldn’t make it out because Gabe was being fussy or was asleep all day long- but honestly, I just didn’t bother to see if I was still registered (I voted in 2008). I definitely had not voting remorse this morning, but my husband someone convinced me that it was my right not to vote and that my vote wouldn’t count anyways since Illinois is a blue state. Poor excuse but at least I can say, I learned my lesson and will be voting in the next election!
I was craving something chocolatey-nothing with bittersweet or dark chocolate- something with milk chocolate so I made these delicious brownies yesterday with our leftover Halloween candy. These brownies definitely hit the spot- they were moist, sweet but not overly sweet, and so delicious!

The only additions to the recipe were adding some ground ginger, sliced onions, sprinkled roasted sesame seeds, and a generous squeeze of siracha, which made the dish a bit too salty but the rice helped soak up some of the saltiness.
Someone tried a new food today and loved it- PEAS! Gabe was very eager to eat every bite, opening his mouth every time the spoon neared his mouth- so cute!
He’s becoming so much better at keeping food in his mouth, as opposed to around the general vicinity
Dinner tonight was prepped throughout the day as Gabe napped. I made a cheesy chicken casserole found here. I cooked the chicken breasts in the oven this morning, the pasta this afternoon, and put together the dish right after I put Gabe to sleep at 6. I was a bit worried about how the bread rolls would turn out because, as always, my dough didn’t rise, but they turned out really good! They were slightly sweet, chewy, and light- yum! The bread rolls came from this website. The spinach was prepared very simply, sauteed with a bit of EVOO, sea salt and pepper.
I thought I would stay up to watch a little more of the election night coverage, but I’m zonked. I’m hoping for good news when I wake up in the morning!
